El Toledo Light Roast

El Toledo Medium Roast
The medium roast in the El Toledo coffee gives smooth, sweetness, balanced low acidity, and some nice caramel flavors, the sweetest coffee I ever had, said by many.
El Toledo Dark Roast
EL TOLEDO coffee in a dark roast exhibits some sweet flavor notes, because it is not heavily roasted, and more caramel and chocolate characteristics combined with its low bitterness making a very smooth dark roast in the palate and stomach.
El Toledo Coffee Fruit Wine description of its origin and value:
Growing: El Toledo Coffee farm is using permaculture design combined with biodynamic farming techniques. This means we don't have a monoculture and don't use pesticides to grow our coffee fruits.
This creates a very particular microclimate with special conditions to produce our coffee fruit with really good flavors.
Environment importance: Coffee is a Golden fruit that is generally never used! To process coffee as we know it 75% of the production goes to waste! -what? -yes, all the fruit part of it is removed from the seeds. To make it happen in the conventional way a lot of water is used, approximately 100 liters of water to make a cup of coffee. Insane right? By doing this the coffee fruit can not be used and it also contaminates the rivers.
At El Toledo we have a different process that unfortunately is not very common in our country it only uses 1 litter of water to process 500 cups of coffee, that way we can collect and use the fruit part and make different products. Huge revert of the process. Big companies don't use this method because it is more expensive.
So by buying this product you are supporting our family business and creating a demand for coffee fruit use that is only possible if we don't involve water in the process!

Cascara de Cafe: Una Tendencia Ecológica
Gracias a esta nueva tendencia, cada vez son más los productores que no desechan la cáscara de sus cosechas. Antes, se usaba como abono pero mucha acababa en los cauces de los ríos, contaminando el entorno. De esta forma, los agricultores han encontrado la manera de que sus cultivos sean más eficientes y respetuosos con el medio ambiente.
¿Para qué nos sirve a los humanos tomarnos un té de pulpa de café?
En primer lugar, es Super Mega antioxidante. Eso es como lo más remarcado por todos, pero además tiene propiedades prebióticas (que ayudan a la digestión) y antimicrobianas, que disminuyen el riego de crecimiento de bacterias como Staphiloccocus aureus o Escherichia coli, que son las típicas que te lanzan a la cama por varios días con tremendo dolor de estomago y otros síntomas del terror.
¿Y a qué sabe el té de pulpa de café?
Depende de cómo lo prepares, pero normalmente tiene notas de vainilla, cereza y Frutos secos, pero si aumentas la proporción cáscara-agua el sabor nos recuerda más a la fresa, la mora o incluso al cacao. Hoy en día está de moda que los baristas experimenten con esta preparación y la mezclen con jengibre, canela y otras especias.
¿Cómo se prepara?
Normalmente la pulpa de café se prepara de dos formas diferentes:
En forma de infusión en una proporción de 15 g. de pulpa por 300 ml. de agua caliente. Lo dejas reposar 4 minutos o lo preparas en una prensa francesa presionando lenta y suavemente. O lo cuelas en cualquier otro filtro.
Explaining The Three Principal Processing Methods in Coffee
We know of three principal categories of processing methods. These three processes differ in the number of layers that are removed before drying. Here is the short list:
Natural or Dried in the Fruit Process – no layers are removed. No water is used in the process
Honey Process – skin and pulp are removed, but some or all of the mucilage (Honey) remains. Very little water use in the process
Washed Process – skin, pulp, and mucilage are removed using water and fermentation. WE DO NOT DO THIS ONE. Also called Fully Washed. This is the conventional form of Arabica coffee processing used in most parts of the world. Uses so much water in the process. It is possible to skip the fermentation step and reduce the water by using a high-tech pressure washing machine to remove the skin, pulp and some or all of the mucilage. This process is called Pulped Natural. We do this one also.
Honey Process
Honey process is currently all the rage in Costa Rica and it has started to spread to all the other Central American countries. Remember that the mucilage of the coffee cherry is sticky and slimy, so it is sometimes called “honey”. During the Honey Process, coffee is dried with some or all of the mucilage remaining on the parchment encasing the seed. Coffee cherries are picked, sorted, depulped, and then moved to drying patios or beds for various periods of time.
